Water kefir basic recipe

This recipe is easy to achieve, ready in a jiffy!

 

Once you have prepared it all, you will only need to be a little bit patient in order to let the water kefir seeds do their work and offer you a delicious look-like soda drink, good for your health!

 

Here’s what you need in order to prepare this recipe, regarding the equipment:

 

  • a non-metallic container: any glass will do (a canning jar for e.g.);
  • a fine mesh plastic strainer;
  • a small plastic spoon ;
  • a muslin and
  • an elastic.

 

…and for the ingredients, for 2 liters of beverage:

 

  • 100 grams of water kefir seeds;
  • 2 liters of water at room temperature (bottled still water or filtered tap water);
  • 100 grams of sugar;
  • 1-2 dried figs without preservatives, washed and
  • 1-2 slices of untreated lemon of about 1 cm thick. If the lemon is treated, the skin has to be removed.

 

How to prepare the recipe ?

 

  1. melt the sugar in ½ liter of water;
  2. when the sugar is completely melted, put the ingredients into the jar and then fill with water, without filling completely;
  3. put a muslin retained by an elastic on the container so that the air can circulate and also in order to prevent dust to enter;
  4. let it all ferment for 24 - 48 hours at a temperature between 15-20 ° C (59-68F);
  5. when the fig(s) float(s), this means that the drink is ready;
  6. strain the beverage through the fine mesh plastic strainer and retrieve this way all the seeds;
  7. wash the seeds in cold tap water;
  8. you can drink the beverage immediately or put it in a tightly closed bottle, making sure to open the container from time to time in order to avoid excessive accumulation of gas. Lemonade bottles would be a perfect choice for that;
  9. carefully wash the jar and proceed as explained above for the next beverage.
  10. amounts are to be adjusted each time, depending on the weight of kefir seeds you have.

Hygiene compliance is essential: the container must be thoroughly washed after each culture. Kefir seeds are to be rinsed after each culture, in cold water, and immediately put back in water.
